Failure of a new blogger

This morning finally having the determination to finally make myself post again I went to my google account thinking that is how I get to my blog, or whatever you call this thing. I look and look trying to find the page I needed and finally gave up went to my facebook account and clicked on the posting from the last time I wrote; then it hits me.... all I needed to do was go to blogger.com, you know that site that this is generated from, and login... hand smacks forehead. I swear I am a smart person but all to often I do something like this that puts that in doubt. haha oy.

Anyway to get to the topic at hand. The first few days after starting this diet were tough trying to figure out what I could eat, how to eat to be satisfied, how to deal with cravings, and finding good recipes. A bit overwhelming, but after a few days I had some snack items made as well as a few main dishes that I could just pull out and heat up.

Once I got to that point my biggest challenge was the chocolate cravings. Now I do like chocolate but I would not say that I get chocolate cravings very often and certainly not ones that persist like this. I had some cocoa power that I could mix into things but the problem was finding a good recipe. I thought maybe I had found a solution when I found a recipe for chocolate avocado pudding and so I promptly made a batch. When I was mixing I tasted it to adjust the flavor. The inside of my ears and throat started itching and my lip went kind of numb, Strange I just chalked it up to a low blood sugar reaction. The next morning I grabbed the pudding from the refrigerator eager to enjoy some with breakfast. Within eating 1 or 2 bites I was itching again. hrm... I kept eating. The pudding was ok as far a flavor goes but I was hoping it would quiet my chocolate cravings, not to mention how good avocados are for you. After eating a small portion I gave up with itching ears and throat and a bottom lip that was kinda numb I concluded that I was possibly having an allergic reaction one that made me kind of sick to my stomach and wiped out for the rest of the day. This is strange because I eat guacamole just fine and eat avocado on sandwiches and salads on occasion. Never had a reaction like this. In any event I will endeavor to try the pudding again when I build up some courage... in a day or two (says the procrastinator).

And so the search continued. Then I had an epiphany. One thing that makes chocolate bars rich and smooth is the fat in them. With that that theory in mind I took some coconut oil (an oil that is very good for you), some cocoa powder, and some stevia. mixed together made some very rich chocolate that conquered my craving with a resounding victory! The great thing about it is that though it is high in fat and thus calories they are fats that are very good for you. Plus it has no sugar or mystery ingredients and was so easy!

That was just one delight that I have enjoyed over the last week. I have enjoyed some roasted cauliflower soup, cilantro lime coleslaw, and roasted vegetable lasagna. Now the lasagna was a great experience to make for a couple of reasons. One was the discovery of how delicious roasted eggplant is. Who knew a veggie that turns a nasty brownish grey color when cooked could be so good! The other was an improvisation; now I had forgotten to get ricotta cheese last time I was shopping and not wanting to run to the store for it I looked in my refrigerator and pulled out some plain greek yogurt. I crossed my fingers mixed it with egg, mozzarella, and Parmesan. I assembled the lasagna and placed it in the oven. Forty-five minutes later I dug into the best grain-free veggie lasagna I have ever had.
Well granted that might have been the only grain-free veggie lasagna I have ever had but still... It was soooo good.

Aside from my adventures with food this week I've had a several pleasant experiences. This first was accompanying the people fro A-1 ranch to a ice-fishing competition to give free wagon rides on the ice. We only took two of their horses with us. They are black sixteen hand high Percheron mares that are half sisters named Daisy and Darcy. It was a delight to spend time around them; I was even allow to drive the wagon, twice! A first time experience for me.

I had one other first time experience this week. I want on my first singe digit degree run. It was ..... eight degrees. Yes that is right ladies and gentlemen I am that crazy. Oh wait I am crazier but you will come to the conclusion yourself if you keep following this blog haha.
I also had the pleasure of spending time with my husband and got to enjoy and afternoon with some new girlfriends.
